Why I Love Idaho

I went to Idaho before coming home for Christmas break.  There is just something I love about Idaho SO MUCH!  Frank asked if I had to chose between Idaho and Disneyland what I would pick.  You might be shocked it hear it, but without hesitation I would say Idaho.  I have so many wonderful memories in Idaho.  Also there is a beauty found there that I haven't found anywhere else.  Rather than going into the details of all the people I love in Idaho here are my top three things I love about Idaho.  (In December, which is very different than in August)

One of those things I try not to talk about...

Last night as a group were kinda mocking my political beliefs I had to try and remember why I believe what I do.  (I know boring subject right? Please hear me out, at least for another paragraph)  There are 3 readings that drastically affected my political beliefs more than anything else.  Today I want to share one.  But first, here is a quote about the talk:

Rock My Run

We all are good at some things... and definitely not good at others.  I will confess.  This confession is actually a bit difficult for me... I can't dance.  Yes, it's true.  I can cheer.  I can do step aerobics.  But I can not dance.  It wasn't until Frank pointed it out that I decided it's time to just admit it.  It's kinda relieving to not have to hide it anymore.

So I can't dance.  Something I can do is: I am a great co-pilot.  On any road trip I can do a great job keeping the driver and other passengers entertained no matter how long the trip is... no matter how late the trip goes.  I am good at it.... unless the driver or passengers expect me to be a DJ.  I am a horrible DJ.  I don't know why.  I love music.  But I guess it's the pressure of trying to capture the mood in music.  I just can't do it.  I can not play DJ.  Some people are really good at it... I am just terrible.

Well luckily for me... my friend Megan introduced me into an AWESOME website called Rock My Run where DJs creates mixes for running.  It creates a 30-90 mix of songs that you can work out to.  It is absolutely amazing!  You can choose the style of music.  You can pick only edited music.  And it is free!  If you are concerned if it is legal or not, it has a Q&A and it explains why it's legal.  And you do have to create an account which as far as I can tell hasn't been annoying at all.  They did send one email welcoming me to Rock My Run but TOTALLY worth it.  I ran my fastest 8 miles ever on Saturday in LA and I think at least part of it had to do with my new playlist!

If only they created mixes for road trips...

P.S. I promise now that I have confessed the fact that I can't dance... you will NEVER see me even attempt it again.  It kinda feels good to not have to worry about it anymore. ;)

Breaking up is hard to do.

We've been through a lot together.... You and me.   We taught almost 4 years of Junior high.  Who knows how many powerpoints, worksheets, and lesson plans.  We got through a master's degree together.  You scared me to death when you got a virus and almost lost my 40 page paper... but luckily, like you always do... you came through.  You've been so good to me.  So it's kinda difficult for me to tell you this... but I've found somebody else. I promise it's not you... it's me.  This has nothing to do with the fact you take 15 minutes to turn on... have a battery life of 30 seconds.... or your overheating problem that causes the fan to kick in so loud that I can't hear anything over it... oh and not to mention that you are so slow that I can not even watch Netflix on you anymore... I promise, it's my issues not yours that are causing this break up.

Step by Step Toffee

My Uncle Nils has some pretty infamous toffee skills... I say infamous because as soon as you know how much butter goes it toffee it is difficult to eat it without feeling disgustingly guilty.  But once you've taken a bit.. there is NO turning back!  He asked me to be his assistant in creating this delicious buttery nutty chocolate heaven.  So I figure I should document it.  

Start by lining a cookiesheet with tin foil and putting a single layer of pecans on the bottom.
Yes. This is my FAVORITE Uncle Nils.

Next it's as easy as 1. 2. 3...

1 pound butter
2 cups sugar

1/3 cup water

Melt the three together on high or medium high heat stirring constantly.

Now this is where the ammature candy maker versus the veteran are made.  Nils says many people take the toffee off the heat too soon.  Just because it starts to turn caramel color is not enough.  (This picture is an example of it starting to turn colors but is not done yet)
You have to wait until there are puffs of smoke coming from the the toffee... and not just a few puffs of smoke, like puffing a lot.  Kinda scary, hence separating the ammature from the veteran candy maker.

Pour the smoking candy over the nuts and let sit for probably 4 minutes

Drop chocolate chips on the top. (You have to wait a few minutes before putting the chocolate on or it will form a while film on the top)
Once the chocolate is melted, spread it out evenly over the toffee.

This stuff is so good that I meant to bring some home for Frank but by the time it got to Frank.... he said it was mean to even give it to him because there were only a few bites left.  Yes it Is. That. Good.

And then we ended with a picture perfect dinner with Salmon, freshly picked salad, rice, and sour dough rolls with LOTS of butter...with two unforgettable quotes.

Disneyland tips and tricks part 2

Disneyland on Saturday was so magical I can not even begin to describe it! I am SO glad I made the trek down just to see the Christmas Disneyland.  It was 75 degrees and perfectly sunny when we got there.  Here are a couple of new things I need to add to my Tips and Tricks:

1. When riding Tower of Terror, if you want to get more of a rush, there are two options. Slack your seatbelt as much as you can and sit on the extra so when you drop you drop even farther. (I do not, I repeat do not recommend trying this method, it's Disneyland illegal)  BUT a fun legal trick is to put you head in your lap and hug your legs, so you chest is against your thighs.  When you drop your feet come up which causes your whole body to come up which gives an even greater sensation of falling.  So. Fun.

2. The Golden Horseshoe Saloon: I've always loved going in to watch the show.  I've enjoyed the hot fudge sundae with chocolate chip cookies.... but we discovered a MUCH better treat.  The chocolate cake went above and beyond any expectations I could possible have about a chocolate cake from Disneyland.  It was very dense with a rich dark semisweet taste to it.  We asked for a scoop of mint chocolate chip ice cream to go with it.  Delicious.  I would highly recommend taking a break from the lines, crowds, heat/cold and make a stop at the Golden Horseshoe Saloon for a treat.

3. and Most Important:
 I have loved a lot of things throughout my years at Disneyland.  I have had a lot of magical moments.  I love the feeling of just walking into the park and going under the bridge and seeing the Mainstreet, the Walt and Mickey statue, and when the crowd breaks... the castle.  I love it.  I love sippin' on French Onion soup in Orleans Square... especially when it's decorated for Christmas.  

But it is possible that Saturday I experienced the most magical thing that Disneyland has to offer.  Luckily I was with Cecilly who knew exactly where to stand during the Christmas special fireworks.  It was a wonderful performance as always.... but it was the last song that nearly brought me to tears.  Possibly the most magical moment ever.  As "I'm dreaming of a white Christmas" started to play across the loud speakers I looked up in the night sky and saw the most realistic snowflakes falling from the night's sky.  The flake floated and fell in perfect formation.  They landed on your nose and eye lashes.  It was so unbelievably magical I couldn't believe it.  It. Was. Unreal.

So the trick is to watch the fireworks on the sides of the castle.  Although you won't get the exact best show of the fireworks (there are trees in the way for some of it) it is TOTALLY worth it to be a part of the snow.

As always it was the happiest place on earth!

So it wasn't until recently when it was pointed out to me that I realized how few processions I have and care about.  With my nomadic life style the past year or so I have come to realize there are very few items I can't live without.  One item that I have become extremely attached to is my watch.  Granted we all realize the purpose of watches have become obsolete with the invention of the cell phone but still...I loved that watch.

Well it was a tragic yet magical moment when my watched died on this trip down Splash Mt:

But for sentimental purposes I kept wearing that watch even though it was broken.  (remember it's not like we use watches to tell the time anymore anyways... so really it didn't matter.)  It only got awkward when someone asked to look at my watch and realized that it was broken.  Then I had to try and explain why I would wear a broken watch.

You can imagine my excitement when I was in the Fossil store and they told me that every fossil watch has a 11 year warranty so I could just send in the watch and it would be fixed for free.

Well over Thanksgiving somehow somewhere I lost that watch.  It was a pretty sad event... but in reality I think it was a good thing.  It's like I am closing that chapter of my life and moving on.  So while we were in Vegas this weekend we picked out another watch.  Introducing my new watch:

And I can not wait to see what this new chapter brings!

How to Lose a Guy in 10 days

Over Thanksgiving we watched this movie... Hilarious because it wasn't my pick.  I think it was Lars'!  But sure enough there I was watching it with 4 guys.  While watching it, one of them (I don't remember who) was like, "WHY is this every girl's favorite chick flick?"

It really got me thinking... because it is true, girls love this movie.  So here is my conclusion on why girls love this movie.

Disclaimer: Of course Matthew McConaughay is beautiful so who wouldn't want to look at him.  And Kate Hudson is gorgeous so who wouldn't want to look at her.  But clearly there has to be something more.

I think the reason why girls love this movie so much is because it's kinda fun to make fun of ourselves.  Although clearly none of us are ever as extreme as Andi when it comes to being a crazy girl... we all have been guilty at some point of doing stupid girl stuff.  Sure we didn't actually make an album of all the photoshopped pictures of what our kids look life... but you better believe we've thought about it.  We don't ask him to miss the last minute of an NBA finals game  to get us a drink and then flip out when it's not diet....but we do flip out when our drinks not diet.  We don't call him 25 times and leave 3 messages... but we might call him a couple of times and get paranoid when he doesn't answer.  So it's kinda a relief to see how REALLY crazy a girl could be and know that we are at least not that bad.

And the most relieving part of the whole movie is... even though she acts that crazy, he still falls in love with her.

Oh Christmas Tree

I LOVE Christmas!!! And luckily for me I have the best roommate ever! Last week Emmie with the help of Frank, Scott, and Zoe put up her Christmas Trees. 
I could spend all night just watching the lights of the trees.
